Ingredients
1 cup pumpkin flour
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk (dairy or plant-based)
2 eggs
2 tablespoons melted butter or oil
1 teaspoon vanilla extract
Optional: maple syrup, butter, yoghurt, or toppings of your choice like fruits
Preparation
In a large bowl, whisk together the pumpkin flour, all-purpose flour, sugar, baking powder, and salt until well combined.
In a separate bowl, whisk together the milk, eggs, melted butter or oil, and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
Heat a lightly greased pan over medium heat.
Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Repeat with the remaining batter, greasing the pan as needed.
