  • Ingredients:

    • 1 cup sweet potato flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1 tablespoon honey or maple syrup
    • 1 cup milk (or your preferred non-dairy milk)
    • 1 egg 
    • 2 tablespoons melted coconut oil or butter
    • 1 teaspoon vanilla extract
    • Optional toppings: fresh berries, sliced bananas, a drizzle of honey or maple syrup

    Instructions:

    • In a mixing bowl, whisk together the sweet potato flour, baking powder, and salt.

    • In a separate bowl, whisk together the honey or maple syrup, milk, egg, melted coconut oil or butter, and vanilla extract until well combined.

    • Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms. Let it rest for a few minutes to allow the sweet potato flour to absorb some of the liquid.

    • Heat a non-stick skillet or griddle over medium-high heat and lightly grease it with additional coconut oil or butter.

    • Pour 1/4 cup portions of the batter onto the skillet to form pancakes. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

    • Remove the pancakes from the skillet and keep them warm while you cook the remaining batter.

    • Serve your sweet potato flour pancakes with your favorite toppings, such as sliced bananas, and a drizzle of honey or lemon.
