Garam masala is the general-purpose Indian curry spice. It contains all of the spices that you need to make a normal Indian curry, except that you add your own chilli according to taste. This is how most Indian households make curry: they keep aside a jar of garam masala, and use it as the basis for all of their curry. They normally grind up the garam masala spices in advance and use it over the course of the week. Our garam masala contains coriander, clove, cumin, black pepper, ginger and cinnamon.
